Loving this Recipe!!

Pinto Beans and Rice

So while on the Ultimate Reset, I have really been enjoying the recipes.  I came across this one yesterday night as I got my dinner together!  Pinto Beans and rice.  Who would have thought that it could be one of the best recipes I have had yet!  I can not wait to put this into our regular dinner time rotation!

So I had purchased a few large cans of pinto beans at Aldi, so I grabbed them out of the pantry and started cooking!  This recipe is so fast and so easy and even my daughter loved them!


Just portion it out in Tupperware put in the fridge and grab and go all week long!

Ingredients:

1 cup cooked brown rice
1/2 cup canned pinto beans (with liquid)
1 teaspoon smoked paprika
1/8 tsp. cumin
1/4 tsp coriander
1 tsp. extra virgin olive oil
1 tsp. Bragg liquid aminos
Himalayan salt to taste

Directions:
Heat beans gently in saucepan over medium high heat until simmering.  Return to pan.   Add oil, spices, aminos, and salt.  Stir well.  Gently fold cooked rice into beans.  Serves 1.
