Cauliflower Soup
I have never been big on soups until I started making my own and realized how yummy fresh soup is. I always though canned soup was just gross! Salty and tasted like the can! So I have been venturing out into the world of homemade soups! I had a extra head of cauliflower that was going to go bad if I didn't use it so i decided to make Cauliflower soup! It was so tasty!
Oh and if you do not own an Immersion Blender.....You must get one!! So easy and clean up is as simple as can be!! Here is the one I own and it is wonderful! I bought it at Burlington super cheap and it was totally worth it!
Now, back to the soup!! Here is how I made it!
Directions
I started with my soup pot and put in the good old trinity! Onion, carrots, celery and I added the garlic at this point too! Cooked this low and slow to soften them up until the onions were translucent. Next I put in the cauliflower and covered them with the box of chicken stalk. Add in your salt and pepper as well. If it doesn't quite cover them then add some water. Let simmer until you cauliflower is fork tender. Use your Immersion blender to blend it all up until nice and think. Add in you cheddar cheese and melt. You are ready to serve! I topped with some microwave turkey bacon and a bit more cheese!
This was so yummy and I can not wait to try my next soup!!

1 Onion
3-4 Cloves of Garlic

1 Box of Chicken Broth
2 Cups of Shredded Cheese (I used Cheddar)
Salt and Pepper

Shredded Cheese
Directions
